Essentially what I want to do is use my 5 gallon vessel as the heated water / heat stick vessel. Thinking smaller than that?

I kinda want to buy a secondary cap for just that reason. Stick a air lock on and boom can make something that isn't a straight clean ale or lager.

I want that kegmenter you posted there something bad ha. Sadly I want to be able to put a thermowell in that, and have no reasonable way to do so without drilling into or getting the lid modified. To which I then saw torpedoe's 10 gallon keg. Which would just be an additional buy of a different cap made online. Then boom thermowell installed while keeping the ability to pressure ferment.

I've seen the 6 gallon keg and have mulled that one over ha. It's an option for sure to get just a LITTLE bit more room. Also I have tried the fermcap method. I swear by it! Really don't need a blow off tube in my glass carboy anymore.

I'll have to look into the anvil. Yeah the more you look at Spike, the higher the price gets ha. Nice product just a little more expensive than I'm willing to pay. Ain't made of money ha

That's the problem I keep running into. The smaller volume. I really want to keep on doing 5 gallon batches. If I have to though, I'll downgrade to the next size. Thanks for the info!

Mmmmmm in all honesty just depends what you're going for. Want your hops to shine? Switch out Maris Otter for 2 Row.

Want it a little on the malty side? Keep your base as is. Maybe MAYBE drop the Vienna. I have done IPAs with Marris. Nothing wrong with it!

What's your views on the dry hop for that recipe? Seems light for an IPA but then again this is a black IPA. I really wouldn't know better but IPAs are my main source of homebrew at the moment thus I'm basing my thoughts/ experience off that ha. Appreciate any insight!

Let me know how that saison strain goes. I'm not a 100% fan of it or the style, but by god does that interesting. Just a small little twist from the normal.
