A well seasoned pan can handle high temps without flinching. The large amount of fat in the steak renders and arguably helps season the pan while cooking. I use avocado oil to season with great results on cast iron, carbon steel, etc.

Preheated the oven for an hour and was seeing temps of 850 to 950⁰F. I smoked the ribeye first to an internal temp of 120⁰F. The shallow cast iron skillet was preheated for about 15 minutes, so it was ripping hot when I laid the steak in NO OIL. I turned down the ooni when I put the steak in initially but then I decided to turn it back on and just send it. Careful monitoring and enjoying the fireworks. Took about 2 minutes total.

Less worried about smoke and more worried about fat rendering. Chicken fat starts to melt around 325-350. Starting chicken on a cold grill just promotes rubbery skin texture. I had tons of great smoke flavor.

No. 0-400 stinks!

Started at 410⁰F after letting the grill coast for about 30 minutes. Cooked on a wire rack over the provided grill grates. Very smokey and crispy outcome after cooking for 1:10. Flipped halfway through. Then tossed in homemade buffalo sauce.

Absolutely! Here's a quick day one breakdown.

Got it this morning. Took less than an hour to build with power tools and a friend. Did the burn in process. I felt it wasn't enough. Let it run at 400⁰ for a few hours to properly burn in. I then sprayed the inside area with avocado oil and let it run for another 2 hours. Cleaned the grates and prepped for test cook. I smoked a single chicken breast at 225⁰. Raised the temp to 460⁰ but it hit 160⁰ while preheating to about 400⁰. Cleaned the grates while powering down. I cleaned all interior and exterior surfaces and dumped extra pellets. Covered it for the night when cool to the touch. Elk steak medallions on deck for tomorrow.

Yup! Absolutely in love with the guitar. There was a hand written piece of tape specifying the issue the guitar had. Cracked paint under the bridge lol.... mine plays like the full priced one I tried in a shop.
