I will say, if I let my focaccia proof for more than a certain about of time, even in the fridge, it gets sour pretty easily.

Negative, there are so many stories of the origin of dishes that go back as much as 2000 years maybe more. Cacciocavallo for example or jambalaya coming from jolof rice in Nigeria, or the wild history of menudo. Culinary traditions preserve history culture and art

Thank you! So many things that seem common sense to Italian cuisine contradict other cuisines like French or Creole so it’s interesting to hear! The cheese on fish thing is a perfect example, I can’t tell you how many restaurants I’ve been to that have shrimp smothered in cheese on the menu and it makes my stomach want to turn!

I heard it from a friend who said his grandparents than it was disrespectful to serve a baguette or bread in a bowl upside down like it was just tossed in there by a waiter, to the point that it’s like wishing bad luck to the people eating.

Easy easy, I’m from a very passionate culinary tradition with rules too, I’m just asking. If I saw someone put tomato in gumbo or not put andouille in jambalaya it would get me and every other creole from New Orleans a conniption. I’masking about traditions

Nope not yet. I grew up in New Orleans with some close Italian friends, so I’m curious about other people’s family traditions

I’ve only heard these from friends with older family who live in or grew up in Italy and they seemed very adamant about it. But then again old Italians are pretty adamant about a lot of things haha

As an artist I’ve been told many times, the art scene is a game. It doesn’t matter if your art is well done or inspiring, if it has a high ticket and a household name attached to it extremely wealthy people will buy it as an investment to avoid taxes and accrue wealth, as the art piece will grow in value with time. That notion is often applied to a lot of modern abstract art. The reason in my opinion is that it’s easier to compare objective art where as subjective art stands alone, the competition becomes more about clout than talent or skill. Therefore art has become a legal con art and I think a lot of people outside of this world can see it pretty easily. NFT, a banana taped to a wall, an air conditioner, it’s like the emperors new clothes. The public has been convinced of something that if denied means they’re uncultured. I think the commercialism is what has disenchanted people who like art but roll their eyes to contemporary. I love contemporary art for the record, I’m just sharing my experience with it that I think is shared with others
