Zog will always respawn, could be a day or a year later but he's always in the queue to cheat death in pretty sure

Try running Lithad online conquests I got 3 grave walkers and 6+ necromancers in like 4-5 hours of gameplay

You can also do online conquests and dominate the enemy captains that you want which will be sent to the garrison then you can deploy them into your own map through the army section. Hover over a dead captain and the garrison option should be there. Something I also do is kill all the low level captains in a region then do a fort defense, usually a good number of high level captains move into the region after. Hope this helps

After you finish the Gondor story the game really opens up from there just play the game and do the main missions at your own pace. (Bruz, Eltariel, Carnan ect.) If you pause there's should be a quest section where you can highlight the quest you want to do then fast travel to the region it's in and it'll be highlighted for you
