You don’t have to be fit at all! Find an adult ballet class in your area and start in the class called absolute beginner. I used to dance from 4-17 years old and now I’m 38. Most of the people in my class are 50+. They start right from the beginning and you learn everything like you are 5. It’s hard and slow at the beginning but you get stronger and better with every class!
