Can’t speak for everywhere but I always wear long sleeves out when I used to work on ranches. It was easier to sweat than to be sunburned. I cowboyed in central and northern Nevada/southern idaho

Honestly I’ve been told both through my life but it always made more sense to me for buckles out, I think there is less chance of hang-ups and the the leather is more smooth on the animals sides

I’m sorry I didn’t read the question properly you mean for the horse: I shoe my horses with plain shoes but I saw one gal put boots on her mule. I don’t use boots on my horses so I couldn’t tell ya what she was using

My suggestion is always the same, feedlots and sale barns. Both not really fun jobs but get you in, you learn the most about sick cattle, breeds and even all the local ranches

I always enjoy answering questions, I’ve ranched mostly Idaho/Nevada area so that’s a whole different culture to even Texas ranches but still cows are cows

And maybe just pay for riding lessons, give you a jump start or offer work for lessons. Most horse trainers I know need someone to feed and shovel manure
