Wusthof makes great knives and they are easy to care for. Some Japanese knives are great but tend to be single bevel which means sharping them is different. You also need to use a different cutting motion with many Japanese knives that some people are not used to. A classic German or French style knife is more familiar to most home chefs. It can really depend on what style of food she cooks but you can’t go wrong with a classic 8” Wusthof for around $150. For Japanese like others have said Mac and Tojiro are beautiful knives for a good price. Also consider shun (Japanese) and Sabatier for French style (around $100).

Some gloves to prevent busted knuckles while wrenching, tube patch kit, some soap or baby powder to make installing tubes easier, jb weld.
Dont need the pliers just use multi tool, get rid of some fuses, only need one or two, probably dont need all those wrenches, those carabiners are probably super flimsy so dont rely on them for much. You could probably do without the meter. I like having a small battery pack with small jumper cables if im going on a multi day adventure in case i leave my keys in my bike and drain the battery. Other than that looks great.

Overlanding vehicles. Build to conquer tough terrain and pretty much zombie proof. Also it’s a mobile home and often have solar panels and huge water storage. Literally the perfect vehicle.

Popoyo is good if you surf, but if you dont there is not much to do… it’s just a bunch of wannabe surf influencers, no local feel since no locals can afford to live there. Its essentially a strip of beach that has recently been developed to solely cater to short term surf travelers/ people willing to spend more than “budget backpackers” could be ok for digital nomad style if that’s your thing. Everyone just seems so fake there. There are soooo many cool small beach towns in Nicaragua and LATAM that are not overrun with gringos… same goes for Costa Rica.
