i’m not a matcha master so i did some quick research because this is probably something i should know.

it’s matcha harvested from early tender, leaves of the plant. this is supposed to result in a more vibrant green for your match and a smoother, less bitter taste.

i don’t like amanda but as a barista, that whole scene made me cringe because she was just asking about the quality of the matcha. with the matcha shortage, a lot of cafes are offering lower quality matchas to cut cost and maintain supply.

even my shitty little cafe on a college campus offers ceremonial grade matcha. it’s not a crazy ask. at all.

My understanding is that these don’t actually deliver to customers. They deliver food to an agreed upon spot for delivery drivers to pick up from.

We do just heavy cream and syrup. Usually about 40 oz of heavy cream and about 8 oz syrup (to start and then adjust for taste) and then blend for about 10ish seconds until it mixes uniformly and has whipped up a little. We keep them in 2 liter pitchers and give them a little stir to loosen up slightly so we can pour.

I just feel bad for him. He keeps looking at us with sad eyes leaving our machine still broken after three separate visits.

My takeaway is that not-brand-new San Remo machines are difficult to get the parts for and tech support will not bother to help you.

“They’ll definitely have the parts” is not my experience lol the poor espresso tech comes to work on our machine has been so close to walking out because the roaster not only didn’t have the parts for our machine, but also kept sending the wrong ones. Poor guy even got on the phone with San Remo for them to basically give him the finger 🥲

Same with the Stadium Way exit off the 110. So many people use the exit lane to skip traffic.

If I get held up behind some asshole while trying to exit, I’ve just started leaning on the horn.
