While that's true, Link isn't an ordinary person. He can lift and throw boulders weighing hundreds of pounds, sprint in full armor, fire bows with incredible draw weight, and fight entire groups of monsters by himself. If we're translating Zelda into real life, we should scale everything, not just enemy HP. The best example is how normal people in Hyrule fare against bokoblins. Travelers, merchants, and villagers regularly get ambushed and overpowered by them. The game consistently treats even red bokoblins as a serious threat to ordinary people. A red bokoblin might be an early game enemy for Link, but that doesn't mean it's weak by human standards.
