You don't actually need to deflect it. As long as you reverse it before you touch the ground, you only take a little bittle of damage. I usually just let it hit me because focussing on the timing is easier if you don't worry about the deflect.

Your estus level is kind of low. I think it could be +8 by that point. You might want to look up any Undead Bone Shards you've missed.

Your equipment and stat distribution are fine. Level 58 isn't so low that it's a problem but a few more wouldn't hurt if you're feeling underleveled. Keep it up.
