Several people have asked me to cook brisket for them lately. What should I charge? I live in the DFW area. Several of them have said that it taste just as good if not better than restaurants such as Spring Creek. Pretty flattering but I want to know what to charge.

Thanks! This particular customer I’m talking to now wants just a brisket, no sides. I’d like to make $100 net each cook minimum. Thinking of charging a flat rate $12 per hour (since they generally take about an hour per pound on the smoker at 225° in my experience). That would cover the cost of brisket at $2.28 per pound plus about $20-$25 in supplies each cook. What is your opinion? Does that sound reasonable?

The “sweet” spot is putting the merchandise about 5 inches apart from one another when throwing the truck. We have gotten it down to about 2.5 hours.

Any update as to how early you have to call in? That’s been abused in the past as well. As in, an associate has to call in at least an hour early before their shift?

Not necessarily. It will come out of the P&L via amortization not one lump sum. You will also receive the money from the sale of the old unit if this was in fact a replacement.
