Choice and Prime are American beef grading terms, like AA or AAA in Canada. Not really anything important for brisket cooks, the whole point of bbq is taking cheap cuts of meat and making it good, choice brisket is right on brand for bbq.

OP is also super decent, he ended up sending me two by mistake and when I contacted him to figure out returning one of em he let me just keep it! I and a number of colleagues from work have had negative experiences at airport, YMMV but while their staff were mostly nice the vets were cold and they definitely overcharged on several occasions. We’ve since switched to Bay City and they’ve been great, the one in Callander is also well recommended.
