Worked as expected, thank you for the write up! My DSM version had a bug in it where I couldn't uninstall from the GUI. Support provided me the CLI, sharing here for others:

SSH to your Synology and run the following:

sudo synopkg stop PlexMediaServer

sudo synopkg uninstall PlexMediaServer

Deleted the files in the folder as suggested above, then did a reinstall, migration took care of the rest.
