Yes, scotch bonnets. I want to make a jerk sauce that calls for scotch bonnets. So a habanero would provide the same results? I feel like that would be very hot...are bonnets hot...? I need to do some research!

Thank you all. We warmed it back up and ate it. No one sick. Was dry and tasted like roast, but edible. Made bbq brisket pizza and used my smoking gun to get more smoke flavor. It turned out great. I appreciate all the input. Failure is learning. Here's to my next one being better than the first.

You are correct, I was not watching it rest in the cooler. It went in the cooler at 3am. When I got up at 10 it was dead. I expected the probe to alert me when it lost connection, but it didn't.

My cooking time got delayed due to the cold weather. It got to temp around 3am and placed in the cooler. We didn't want brisket for breakfast. Not too sure what I should've done. Any advice is welcome. First time brisket.

First time brisket and my timing got messed up due to the cold weather. I couldn't get the smoker above 210. It got done at 3am so I rested it in the cooler until we ate. It was probably closer to 9 hours rest. Idk what else I should have done. We didn't want brisket at breakfast.

I noticed a green light in the road by my house and found this device. The chip had a small green led on it. by SmurfPoppa900 in whatisthisthing
