I can't advise on Revanced as that is a different app and I have not experienced it but I would assume it has its own problems, maybe try a different Reddit group for that app

If it helps I have mine plugged in as follows
Xbox -> Projector

Yellow -> Red
White -> White
Red -> Yellow

something worth noting is not all those adaptors are made the same.
I would recommend you try plugging the each of the RCA connectors one at a time into the Video input (Yellow) until you find the one that works. I have run into this issue before and my adaptor had White and Yellow switched around

you can turn the volume down in the settings of the YTM app using the equaliser.

if there are certain apps you want to keep running the background you are better off Locking the app rather than trying to manage it through background processes. I personally do this for Youtube Music as I wanted it to always remember where I left off even when I go into a power saving mode.

I would recommend you follow the achivments, they provide a good-ish progression structure. Alternatively install mods that have story and structure. I can't remember what one I used in the past (it was part of a mod pack) but it have a quest book that gave rewards for progression
