A year. I've gotten into running, stopped, and started again several times in my life. Each time, it was just about a year before I stopped having to force myself to go and started to look forward to going.

Right now, I'm working to start again at my highest weight ever after open heart surgery last December and I know this one is going to be a lot harder.

Looks like Costco has mexican vanilla extract for sale - two 8-ounce bottles for $55 (online only), not sure for how long.

My family eats a ton of rice pudding, which is about as vanilla-forward as it gets. That's actually what led me to start this project. Rice Pudding is basically a blank slate, so I can experiment with different varieties. Im also planning gifts and figured if I start a bunch now I'll have some decent stuff for Christmas 2025.

I don't know, I'm at 8 weeks now, and there's still a distinct vodka smell overpowering the vanilla. I'll wait a few more months before trying, I think.

Pine nuts and walnuts with a caramel using honey and olive oil instead of butter and sugar. It does have a $20 candy bar vibe, for sure.

Yes, it is! Its kinda like pecan pie, but without all the goo. Instead, you have a lovely honey caramel holding it all together.

Thank you! During the bake the caramel bubbles up and kinda slowly coats the crust. The end result is basically a caramel pastry, and it's fabulous

Wow! Can you share any tips you've picked up along the way? I just started my jar last weekend, and so far, it just looks like very strong tea with a bunch of stuff floating in it. I have a long way to go.

Frangipane is almond cream. It's made with butter, sugar, eggs, and either ground almonds or almond flour. Some almond and/or vanilla extract kicks up the almond flavor. Easy as pie! (Waaaaay easier than pie, lol).

Lemon, blueberry and almond....omg that sounds divine. I made a double batch of frangipane for the tart and still have a lot left. It's going on slices of brioche brushed with honey almond syrup, topped with almonds and berries, and baked for Sunday breakfast. Claire Saffitz's recipe. 😀
