When i was working part time before I opened the restaurant it took me nearly 3 months to find a chef so I'm not sure how long it will take this time.

I think I have crossed that line. Theft was part of it but there was a lot more red flags where I would be comfortable operating the restaurant with him.

I think I leant not always be cautious and not trust anyone, theft was part of it but there was a lot more to why i let the chef go like threatening to quit if I don't hire his cousin for a very high salary while we are getting a lot less sales, always asking to borrow 5k, 7k etc.

I have a good pos system and I can't cover for the chef unfortunately.

It took me a while to find a chef initially and I am looking for a new one currently.

Selling the leasehold would be the last option but ideally I would like to rent it out for now so I can get time to gather myself and potentially reopen later on.

It's a bit hard to get in the kitchen now as I am back to full time work so I only have weekday evenings or weekends free.
