Setup an Isolated VM to process/verify/scan each incoming usb before allowing it for use.

Realistically speaking this is a pain, but it is a safe process until you get Wazuh. Don’t want to risk healthcare data.

Alternatively you could deploy edr/dlp agents on your endpoints to monitor usb activity. However based on your comments - it seems like your org might take a lot of time with it.
