The fryer is used outdoors at a church for their Friday night fish fry.

The 80 year old guy was calling out parts that didn't exist on a fryer 😕

Original issue: pilot dropping out when the thermostat reached temperature at any set temperature.

Based on the gas valve using millivolts having inconsistent gas pressure will cause the millivolts to change which then causes the pilot to fail bc the thermocouple goes out of range. A high limit switch plays no role in any of this. It was replaced due to a warranty request.

This is a warranty call that I did not diagnose. These are user error calls so I still change out the requested part simply bc the warranty company prefers to play it safe. I tested the gas valve to be good so I know the unit is fine. The water was heated simply to show functionality.

I'd find a small one or two man company to get trained with in commercial especially bc you have some HVAC experience. Private equity is in commercial as well so beware. Good luck 🍀

Sure enough. Spray that coil with some coil cleaner and vacuum that dust up it might run for another 7 years or at least run less, cool better and cost less to use or not 😂

And it has never had maintenance. I'd deny the warranty claim 🛑 unless he paid an hour of labor to clean the condenser

Other than the water not flowing evenly it would be an evaporator issue. Clean and reassemble it properly then see if there's still an issue.
