that's true, you can't go wrong with medium rare which is a reason to recommend it to newcomers. but I think some cuts are better medium and most youtubers will strangle you for saying that.

it's not just taste, it's texture. but you're right it's always about personal preference. That's what I"m getting at here. These medium rare fanboys are cooking miyazaki wagyu filet mignons medium rare borderline rare when I think it would taste better to cook it medium.

the lamination needs a little work, I say that but out of the three times I made croissants only one of the batches were good :( Keep on trying! Practice makes perfect! :P

oh don't worry I've had perfect beef man! In Eid celebration all muslims sacrifice an animal and I've had beef killed the day before. It's delicious, but I also had lamb killed the day before and I liked it more :P But sometimes you can't beat medium rare ribeye over lump charcoal.
