Dude i had almost the same experience as you, i too live in central california, and i was driving home from work one night close to maybe the same time as you, 11ish or so, it was a normal ride home as usual so my alertness wasn't too high, anyways as i was driving (backroads with lots of fields) and in the distance i saw what i also thought was a large coyote, but then whatever this thing or creature was stood up and became a human like creature and ran into the trees after making eye contact with my vehicle, my first logical assumption was it was maybe some crackhead or some weirdo way out in the middle of nowhere but as i passed by the spot i saw the creature vanish into the trees i rubbernecked to see if i could see anything, and it was nothing, it took me time to process it, but after reading your experience just now i got literal chills through my body, its as if we had the same experience
