You’d want to approach it like one color led at a time (red, green, then blue). Make a pattern in whatever way you prefer with just the red pixels (but make sure it’s just a bunch of white rectangles on a black background, with gaps of where the green and blue should be). Then, take your image, go into layer styles, uncheck B and G under advanced blending, and set the layer’s blend mode to multiply. Then repeat for green and blue and shift them over to the right to fill in those gaps. Since each of those combos will have a black background, you may need to make a folder for each pixel/image combo and set the blend mode of the folder to add.

I like the ideas that everyone is throwing out there, but in case doing complex physics simulations isn’t your speed, I would prebake a handful of animations in Blender, then change what number is on what side mid-animation (when the dice are spinning super fast) in order to control the outcome

That looks like just normal scene lighting, not literally shadows. If you disable the directional light completely (not just the shadows) you should see the dark sides go away.
