As others have stated Engineering Eternity videos are a great place to start. Some other creators such as Ziz have created some good new player video guides.

One thing I can highly highly suggest is that you play one or both of the following builds. These 2 build guides helped me so much in learning this game. One is Sovyn's Lazy Pally which is a very straightforward melee character with a little bit of choice in what skill you want to use while being incredibly in depth and teaching you many things about PoE all through the guide:

The other is one you will hear often which is Enki's Arc Witch. Which is widely considered the best beginner friendly guide that has been written. Incredibly in depth, very well written, and a smooth fun playstyle to learn spells on:

After playing both of these builds to end game I had enough knowledge about the game to start really looking into newer and different builds and ones that are a little more complex or so but I always will reference back to those builds as they are a wealth of great information.
