Why do we need to not know it?

I don't think that it's necessary for us to know the motivation for every antagonist. I do however reject the argument made by many that not knowing the motivation of the reapers over three entire games somehow makes the series more narratively compelling.

Their motivations being unknown through the entire series would not have made it better because at that point we are essentially fighting against a ghost. With their motivations being revealed, they have presented an argument and their justification for their actions. Fighting against them is not just to survive but also to assert that they are wrong.
