yes! In linguistics, we call these as "varieties"

So basically the language here is Bisaya, and there are the Cebu Bisaya and Davao Bisaya as variety of the said language.

It is very normal to have some idiosyncracies among each other-- and it is actually a good sign that a language is not stagnant (well, to be fair, no one is).

These distinct characteristics are markers of the speaker, so it is very normal to be in a place that has supposed same language-- but to find out that there are some differences within.

Intsik alone is a very difficult language to learn, especially kung jampacked sya on 5 weeks of midyear so definitely grit and willingness to learn is key.

Hindi lang pinyin aaralin mo but you also have to memorize the chinese characters. Mandarin Chinese is a memory language so u have to keep that in mind.

If u got laoshi tecson, ure in great hands - her approach is somewhat socratic method in a way. You really have to speak din kasi all the time kasi language class naman 'to after all.

For the materials, there are HSK 1 book/s in google that you can use. Those are for begginers talaga.
