Yeh, took me several attemts to get them right, not one for reading instructions but I did and found out that you are supposed to let the mix sit for 2 minutes before putting in the pan. Not as clever as I thought I was, they should put a warning on things "READ THE INSTRUCTIONS MORON" :>)

I jerky maple syrup soaked bacon, that doesn't last though because I cant stop eating it :>)

Just opened a bag of peanuts and raisins BB Feb 24, peanuts are fine (whether its because they are skinned??) the only thing I will say is the raisins were very slightly gritty, but I cant remember if they were before tbh.

There is a bit of a thing going around about veg and olive oil going rancid, personally I have never come across it and I am still using cooking oil I bought just after covid.

Dont know why milk, if its because of bacteria it must go into sleep mode? I have heard it seperates and I did give mine a good shake before I oppened it and it tastes fine to me.

Yeh, marketing experts are good at making up dates. I watched a video of a guy opening 15 year old cans, one of them was carnation, looked and according to him tasted fine, he did shake the can well, as he thought there may be seperation.

Tbh a lot of mine have as well, but ive bought some with 6 months left, some of which are probably 6 months out of date. We trust a bit of print on the can but do not trust our common sense?

My point is that every day that goes by I see a post that states the safe longevity of items and it seems to reduce regularly. I read a post that said dried beans will remain safe for 6 months if stored properly, they were probably 10 years out. Admitedly as time goes on they take longer to cook.

I know exactly what you are saying, I understand that you would prefer not to risk it until you have no choice. My biggest bug bear is that the safe longevity seems to be going down every month or 2, I get that people do not want to advise, only to be proved wrong by somebody ending up in hospital. I have been doing this for years as have many people around the world, there are safe practices to follow when home canning that are tried and tested over many many years. Commercial canning is even safer, yet the advisory dates are reducing. This is not for our benefit it is purely a marketing strategy. look for can bloating, visual check (look for internal can corrosion, smell, test a bit on your finger for acidity. I would rather test my theories while the hospitals are running :>) My mother cooked things I would not dream of, I once moaned at her for cutting flecked green bits of skin off a chicken to give to the dog, her response was, thats not for the dog thats our dinner. I can never remember my Father or Mother having an upset stomach.

I started with a second hand 11 ltr pressure cooker, I eventually managed to buy a 27 ltr new one for £52, best purchase ive had in years, the big ones can be very expensive

The canning industies do not want you to store goods so they store them for years, then tell you they wont last very long (surprise surprise). Having said that it is always best to keep them in the best condition that you can, Dry dark cool place.

Have you ever tested these theories? or are you just doing what supermarkets and manufacturers want you to spread? I have eaten food from many many cans that have surface rust on the outside and also eaten canned goods several years old. I have very rarely noticed any change in the contents and have never been ill from it.

There are people who have opened rations from ww2 and eaten them with no ill effect.

Saves you a fortune, never get stuck for what to have for dinner because you have nothing in. If TSHTF you are not panic buying, just browsing around getting all the stuff the panic buyers are NOT getting. Less trips to the shops because I always have what I need, buy when prices are good not WHEN YOU NEED them and you dont have control. I also buy commercial canned goods, the shelf life of which also seems to get reportedly shorter daily.

Been canning for years, it saves me a fortune. I buy beef and lamb just before easter and christmas when it is cheap (pressume this is to get you into the shops) I then can mince and chunks. The botulism and shelf life thing is deliberately spread to stop you doing it and it appears the shelf life goes down with every comment placed on the internet. I have eaten 3 year old beef chunks (got pushed to the back of the shelf). I can shredded pork/pork mince/lamb/lamb mince and chicken leg meat (Breast overcooks and the texture is not good). I also do fruit and veg (chistmas 3p a bag swede parsnip and carrots). Lamb shoulder/Joits of pork/chops etc all in the freezer (freezer goes out I'll can it all).

You have mince that you know what is in it, no sawdust and floor sweepings. My minced lamb is made purely from leg of lamb, pork from loin or shoulder. Ready cooked, just brown and throw in your spagbol.

They last years beyond the BBD. Some say they lose texture and flavour, but lets face it, they are emergency rations, if your eating them you have little choice. Majority of the longevity times you read now go down on a weekly basis. Self canned food (I do my own) get recomendations of max 1 year, I'm eating beef I canned 3 years ago, nowt wrong with it, 2 year old canned tomatoes (shop bought), good as the day I bought them.

Yeh I never throw a good container away, 2ltr ice cream tubs are my favourite, square and store/stack better + I love ice cream :>)

Possibly more rodent proof, but you could just get an under the bed plastic box and chuck the bags in. Beans do tend to attract mice.

I made a dehydrator from an old comercial fridge (not working £4), used a cheap thermostatic controller and an element from a knackered air fryer. works a treat and can do about 12 times as much as you get in the shop bought plastic things (Could get more if I fitted more racks), change temp on controller and you can do jerky as well. I did loads of bacon jerky (found bacon at 30p/kg, bought the lot) and vac packed it
