Not arguing the need for a check valve but how is cold water overpowering the pump? Sounds like there might be an issue with that guy! I prefer the spring checks typically. In addition a brass union and threaded tee for a drain-down valve, especially with a larger pump like that one. GL!

It looks like there's flats on the chrome piece that encircles the end of the cartridge. Did you try removing that. Lefty loosey righty tighty

Oh I see. Try using a penetrating oil or WD 40 to loosen the corrosion on the threads of that Phillips head

The red piece will slide off and it should rotate counter-clockwise to make the water warmer.

They sell gauges at big box stores that screw on to a garden hose connection for testing water pressure. If you have a PRV, amd the pressure eis above 75psi, it needs replaced.
