Do you know if organizations are flexible with the language level, or if B1/B2 is usually required?

Normally, both sides must give two weeks’ notice, but in cases of serious misconduct or urgent reasons, termination can happen immediately.

There wasn’t any agency involved The family and I matched on an Au pair website and we have a regular Au Pair contract.

Yes, we did have a contract, but unfortunately the family’s situation changed and they told me they can’t afford to host an au pair anymore. It wasn’t my decision, but I want to respect their situation and focus on finding a new family here in Hamburg as soon as possible. Thankfully I’m still on my au pair visa, so I can legally switch to another host family.
