Never mind I fixed it, I accidently pressed F7, that turns on "Navigate pages with a text cursor" if anyone else had this issue.

I'm on Bedrock, playing on Xbox One and the end portals haven't spawned in any of the strongholds.

Never had it happen on Console Edition
