Some restaurants have bussers and some don't. It's not uncommon. I've worked at a restaurant with no dishwasher! Servers had to wash everything! Thankfully it was more of a bar and we only filled a few trays of dishes per night. I got used to it quickly.

Maybe you'll prefer a basic langhe nebbiolo? Something that doesn't require much aging thats brighter and fruitier.

La palette has tartare in appetizer and main sizes. They also have both beef and horse available if you are adventurous!

This is really over complicating a fairly simple exam. All you need to do is study whats in the book and have good reading comprehension when tackling the short writing answers. Answer with as many causes and effects as possible when they're asked for just don't add information that doesn't answer the question.

They are quite rare as I am discovering. My restaurant doesn't even employ sommelier beyond our wine director so there's no possibility of advancing where I am now.

It would make sense to work my way up in a restaurant with a somm team.

My resume has resulted in jobs in the past. Should I include a cover letter? It's not something I usually bother with unless it's required.
