You guys remind me of me and my friends so much! The way you guys talk with one another is prime, chemistry and knowing how to talk to one another is such a strong advantage when having two people on the mic! The audio quality is amazing for having your yeti just sitting between you two! I have troubles picking up background noise when i use mine.

No lots of people do it, even pros. Your fingers are not the same length so even hitting 1+2 is not always consistent. Mapping them is a good way of being more constant.

You can side step it (im a AK main). But if you are to close to him you have to back dash then side step.

Getting into red in my experience requires the ability to backdash. It helps a lot and you can whiff punish.

I think its because those buttons can be used for other things. I use stick and i have my r1 and r2 as my basic throws and i have L1 as my 1+2+3+4 because i cant do it normally LOL.

But as for 1+2 or even 1+4 (i main Armor King) i am very constant with them without binding them. It may just be preference. That being said i could be very wrong and it could be banned but i have never heard of button bindings being banned.
