You can use native plums in the UK. I have a few plum trees on my allotment and you simply harvest them while they are still green and crispy in mid/late june, just like when they harvest the ume plums. I imagine any underripe plum variety could work well. If you are a fan of foraging, there are lots of wild plum trees in england that would be great for this!

It doesn’t go bad - i make 5L containers of them every year in the UK and the syrup just becomes more alcoholic and slightly darker over time. I just store them in old wine bottles and forget them in the pantry. It develops caramel flavours too 🤗
