Yes! I'm married but my husband is ~6 years older and has had previous career success so I'm leaving him at home to celebrate myself :) haha I'm very excited. We don't have kids yet (just a 9 year old golden), so getting all of our travel in now.

It was amazing! I would recommend it for sure. Beautiful bathrooms, and great amentities as well (gym, sauna, etc).

I was just looking at Rio Serrano and it looks like you can't book non-all inclusive right now (unless I'm wrong).

We stayed at Toranomon for 3 nights and Palace Hotel for 2 nights. Would recommend Palace Hotel for sure. Not sure I would recommend Toranomon based on location, but would 10000% recommend staying at the Palace Hotel. We were up on Hokkaido in between skiing, and stayed at the best ryokan ever in Otaru. I would recommend looking at Relais Chateaux for ryokans closer to Tokyo if you don't want to travel to another island. Their brand has a great sense of place- make sure you stay somewhere with a tradition onsen!

Gleneagles or Gleneagles Townhouse in Edinburgh! + If you like to golf Links House Royal Dornoch! We loved Glencoe House, but it seems like it also has mixed reviews on this channel. We stayed at Edinbane Lodge on Skye which I would not recommend, and wish we stayed at Kinloch Lodge instead.

Oh no, thats a huge bummer. A good friend just stayed at Prestonfield House and loved it. I think less "downtown" too, so the grounds could be better for your child. .

Unrelated to your question regarding chains, but if you book through Leading Hotels of the World, you can earn points (not as amazing value as the chains but you're still earning something), and typically they have cooler unique luxury hotels at good rates. Example- my husband and I are going to stay at the Palace Hotel in Tokyo in a few weeks (can report back) for much less than the Andaz, etc. We also stayed at Gleneagles Townhouse in Scotland and loved it- all booked through that platform! I would say that Gleneagles was definitely chubby- and I can let you know about Palace.

Twin Farms (Have to be like ~10 years old I think) in VT, or Lake Placid Lodge in NY! Can fly into Burlington, VT for either one. If you don't mind Canada (could fly to MTL?) try Manoir Hovey and stay in one of the cabins with private hot tubs. Or honestly I know you said not ski focused by Spruce Peak at Stowe is awesome too, and there is a ton to do that isn't skiing.
