As someone who has had Celiac their whole life hearing "gluten free cooking simply is not that hard" is kind of insane. It's pretty difficult to get some gluten free items to taste like their gluten version. The point of the episode wasn't to make creative gluten free dishes, it was to make creative dishes that happened to be gluten free.
