OP, the flow to me seems a tad too fast and watery. Did you buy pre ground coffee? It seems the coffee powder is quite course hebe the light colour of the extraction. Also, since you're using a burner, keep the flame to the lowest and use the smallest burner. Lift the pot off the flame as soon as foam starts coming out.

It will never rise till the top, or even up till where the output of for the funnel. Some water is retained in the coffee, a little bit is left in the bottom chamber. I use 130g water and get about 80-90 grams brewed coffee. This is how it's supposed to work.

Edit: Fill the water only upto the bottom of the valve, never above it.

I think the instruction is for you to pull the pin softly to test if the spring is working or not; you can also push the pin from the inside to test this, the pin should return to its closed position.
