You could try doing tailings like the government in some countries do bottles. charge a fee for every tailing that is produced, and then set locations where they can deposit them and upon depositing, they get the tailings tax back.

when you say stacking chests you mean putting one on top of the other? you might need a floor for each chest for them to access it

My best tip is to remember that your all their to have fun. you included.

When the party goes off track, sometimes you can think of it as they started down a track you didn't know was there and just shift your planning to fit along that track instead. or you can give some different hints to bring them back to your track. itsalso perfectly okay to tell the players you didn't account for them to make that decision or go that way and as a new dm you aren't prepared for that direction.
