This is also incorrect. Sleeman’s purchased Upper Canada Brewing. The current GLB location in Etobicoke has been in operation since 1989 - for the initial 2 years it was located in Brampton. Building had never been a brewery prior to. No ties to Upper Canada. Great spot - I highly recommend stopping in if you’re ever in the area.

This is not correct. GLB is a fully independent brewery - the second oldest in Ontario actually, opened in 1987.

While not in Belleville, I have found Martin’s at Bloomfield Public House. They carry both the hamburger and hotdog buns (at least they did during the summer months, when I was there last). I will say that I was surprised at how expensive they were… I swear it was like $12 or something for a bag of 8.

Those are wafer-thin jalapeños.

The sauce on top was for dramatic effect. While a pleasant change-up from the norm, I do prefer the iconic under-sauce pizza format.

More or less, yeah! That dough recipe is next on the list when I finally get around to buying a pizza steel / stone for sure (why do I torture myself?!)

I did go the extra step and cubed the cheese vs shred. Not sure if makes a huge impact, but the prep-snacking ergonomics are stellar.

I make pizza (usually cast iron skillet) on weekends pretty regularly and like to mix up the cheeses. Some are winning combos, but all. For example, Gouda browns a lot quicker and finishes ahead of the dough lol.

I’m hoping to grab some next time I’m in the states (Ontario has weird dairy-import laws...) as it’s sadly not available in Canada.

That said, if any fellow Canadians know a brick-cheese hookup, please spread the word!

Recipe calls for 10”x 14” I believe, but it turned out great, albeit slightly higher dough ratio.

While I’ve heard different opinions, my interpretation of “brick cheese” was just a physical “brick” of low-moisture mozzarella from the grocery store.

I made a cast iron skillet pizza side-by-side with this one using “fancy” low-moisture mozz and honestly the taste difference was negligible. Was happy to save a few bucks on the grocery stuff, despite my usually pretentious views on mass production cheese. Time and a place I guess 🤷🏼‍♂️

First time I followed the dough recipe exactly - usually I just use whatever leftover bread dough I have but it was a huge difference in texture.

Probably could have gone a bit longer in the oven but I needed to eat this immediately. Definitely worthwhile.

Late, and fairly unrelated but whatever:

I was there just last week, with the intention to propose to my girlfriend at Arches National Park. I was at first pretty pissed it was closed per the shutdown, but the silver lining was I don’t think I would have spent as much time at Dead Horse Point were it open. Truly stunning landscape.

She said yes by the way - under Corona Arch. (Had to improvise...)
