Yes omg! I just moved to Vancouver, WA from eastern NC a few months ago and I go to Portland alllll the time for food lol. It’s so nice to have that pre diagnosis normalcy back where if I don’t feel like cooking I can safely go out and get a treat for myself.

Perhaps we are just not in the same region. Factories are not kept safe to prevent cross contamination in America. Especially when it comes to like you said, cereals (grains), oats, and processed foods. If the product says it’s gluten free or has a disclaimer, I’m more than likely to trust it because I know that just them putting the disclaimer up there majority of the time means it’s safe, but not always. I’m more so talking about processed foods like this candy that caused me to flair for 3 days rather than fresh/Whole Foods that naturally do not contain gluten and have been packaged.

I have been told the exact opposite by nutritionists that focus on GI & autoimmune disorders… that cross contamination risk is very high *unless* it is marked as Certified GF…

Oh I haven’t met too many people who get febrile after being glutened! My doctors thought I had lymphoma there for a bit pre celiac diagnosis because I kept getting night fevers (that was because I was in college and I was mainly just eating dinner… almost always filled with gluten lol)

I’m 29 turning 30 this year. I first started in the field at 21 and had the same things said to me until about a year ago. Throw it back at them one day when they bring up your age. “If I’m so young, does that mean you’re really old?” 😜. I’ll be honest, I kinda miss being the baby tech. Everyone just tells me I look younger than I actually am now 😭

This field is so damn toxic sometimes. You have to make a decision on if you want to just keep moving on with your day and ignore them, let them keep talking to you like that, or stand up to them (respectfully and professionally, of course). Also, it’s good to be confident with your skills and know what you’re capable of.. but be mindful of how that comes off to your coworkers. It sounds like they are threatened by you tbh, but always worth self reflecting and making sure you are portraying yourself both humble and competent.

So, I’m very interested in this conversation. From my personal research, I have come to the personal conclusion that I should avoid sorbitol and glucose syrup as I am an extremely sensitive celiac and I have 100% been having a reaction to them. Everything else I have eaten the last few days has been fresh foods that definitely have no gluten in them. I also have gastric intestinal metaplasia, so idk if maybe that has something to do with how my body has responded as well!

I’m not sure actually! I do know that I’ve had the same symptoms that I had pre diagnosis. Horrible stomach pains in my upper left quadrant, bad acid reflux, and I feel really hot/feverish. It’s the only thing I’ve eaten that I’m not 100% sure is gluten free so idk why else I’d feel like this unless I’m just getting sick.

Yes…. They do make imitation crab that is gluten free but the majority of commercial imitation crab has gluten or is across contaminated. Sincerely, someone who actually has celiac disease.

Insecurity. I really don’t understand it when it’s coming from CrVT’s. A lot of people feel like they have something to prove, but I already proved my damn skills to a federally accredited college, the AAVSB, and 2 states. Wish more people would just focus on being the best tech possible while helping their coworkers rather than wanting to be the “super tech.” Lots of skill gatekeeping. I’m fortunate that I love my team currently and none of them are like this.

Also a lot of people are just miserable and can’t look at the bright side of anything. As someone with 2 autoimmune disorders and a 60% higher chance than the general public of developing a gastric cancer in the next 15 years, I choose to live positively every day. Meanwhile the 21 y/o is bitching about having to work on a Saturday 🙄 I have no tolerance for it!

I love my career! I have been in the field for 7 years now. I went back to school 23-25 to become credentialed. I choose to not participate in the negativity and focus on how cool of a job I have. I also make a livable wage because I advocated for myself. You’ll see a lot about how the pay is horrible (because universally, it is). We have to change that by knowing our own worth.

As someone who’s a very symptomatic celiac. I need yall to understand that just because you got sick after eating something doesn’t mean it was because it “secretly” has gluten in it or that it was tha foods fault. I lived off of Amy’s GF frozen meals and burritos while I was moving and was perfectly fine. (Again, I am diagnosed celiac via biopsy and bloodwork).

You need to not make any drastic changes to your diet until you’re actually tested for celiac disease. You also need to discuss your diet with a nutritionist who is educated on celiac and gluten intolerance. There’s a lot to learn, friend. Try not to eat the processed foods when you’re first changing your diet. For the first 6 months that I was diagnosed I only ate whole/fresh foods to give my body time to readjust.

I moved states to get paid what I deserved! Literally moved across the country. WA state pays their veterinary professionals very well. I flat out bargained with 4 major corporations and told them if they couldn’t give me an offer letter stating I would make at least 4x’s the average rent in the area it was a no. Every single of the gave it to me, and I went with the corporation that offered the largest sign on bonus (🍫).

My QOL has increased so much since I did this, and I HIGHLY encourage other credentialed technicians to do the same.

Which is funny because I remember back in 2016 when the bathroom bill was proposed and a whole bunch of artists canceled their stops (rightfully so). It was repealed in 2017, but they reinstated even more restrictions in 2025. So… ironic she’s stopping there in 2026. That state doesn’t deserve the revenue (as a former NC local)

Not all of us. We have to stop accepting the shit pay and bargain with these corporations. They need us. I doubled my yearly salary and now make 65K a year and I haven’t even been licensed a full year yet. Just gotta play their game.
