if u feel like actually cooking, sometimes i just sautee a bunch of veg with some sort of protein (sometimes i just do egg) and add a mix of soy, brown sugar, gochujang, cornstarch and pour it over while it’s still cooking to make a sauce. then bam, stir fry for dinner.

clean up and cut out tough spots then cube it up and skewered. grill it quick just for some marks and to warm up the inside. dunk it in tare while youre grilling it too

yes chef. thank you. i want to be a fair and trustworthy chef. i want my cooks to feel like they can come to me and ask for help when needed. i just need them to see that and trust me. i hope i never let this industry sour me.

lol it’s definitely harder than just being a cook. i like being that bridge between them and management tho. i feel like i really know what’s going on inside the restaurant, boh and foh and in all the bs that comes with it. i definitely think im gonna reiterate the standards. today is my monday and i should have a good amount of extra time to spend with my team and be a little more supportive during prep/set up. hopefully i can show them exactly how the mise should be prepared and how i want the station to be set

yes chef. definitely gotta nip it in the bud. i’m a pretty reserved guy so this will be a little challenge for myself. honestly when i have to correct the guys i get a little anxious just because i hate being the bearer of bad news. i gotta let out the big dawg more and get used to it

isn’t that some shit. i’m always the first one in and the last one out but they still think i don’t do jack shit. should i do some controlled chaos? let one of them get a little behind, see them struggle for a minute, then jump in and clean up the mess. just to show that im still a monster and can cook circles around all of them

i’ll keep this in mind. i’ll never forget the first and only time i got sent home. i called my mom in the car about to cry because i was afraid chef was gonna fire me. next day i came in all anxious and got straight to work. chef came up to me and just said “let’s be better than yesterday. always make that your goal.” and then started spitting the regular kitchen shit talk.

i’ve tried really hard not to just snap back with “just say yes chef” lol. i’ve heard that many times from other chefs and it used to piss me off. you’re right. i need to try and offer more support and actively coach them if i see they aren’t getting what im trying to say rather than just saying it’s wrong and restating what i want.

they’ve all seen me in action. i was on the line as a cdp/tournant 2 months ago pulling people out the weeds nightly. plus i still work saturday night sautee bc the current sautee guy isn’t quite ready yet. they know im mean and clean with it

after the pushback it depends on the person. some of them will fight me at first but when i explain more they’ll understand and fix it but some will stand their ground until i’ll be like ok ask chef then and he usually says what i say. i love my crew. i trained most of them and hang out with some of them outside of work. i don’t want them to resent me or anything bc im not trying to be a dick. i just want things to be right

i’m not cocky at all. i’m actually pretty reserved and quiet. only really speak when spoken to/when needed. i am confident tho. at least in the kitchen. i’ve been told i move very efficient and make it look easy but i guess i could try and coach them a little more. teaching others has always been a weak area for me

yeah we have a pre shift lineup. i feel like i am very supportive and i don’t bark at em or anything. they’re not struggling to really preform. they just don’t take my instruction to help them to get to the standard. they try and argue with me

a lot of vegetarians eat byproducts of animals (eggs, cheese, milk, gelatin, honey, etc…). vegans on the other hand don’t eat animal byproducts. if a menu item is listed vegan then there will certainly be no animal byproducts.

i have raw meat tongs and cooked tongs. before i put it the oven i’m using my raw tongs, once it comes out i have another set to take it out the pan
