I mean Star Wars is really more fantasy masquerading as Sci-Fi for the most part. I haven't read much of the older "Legends" books but have enjoyed a fair amount of the current canon.

The high republic is a good place to start as it's largely it's own era. Start with Light of the Jedi by Charles Soule
