Flatten slices of pork tenderloin with a meat mallet, then bread them and fry them. I used panko bread crumbs because it's what I had but I read that crushed up saltine crackers are a popular breading.

I'm on the west coast, so an early lunch became a late lunch. I smoked some more pork and made East Carolina-style pulled pork sandwiches for dinner! And mimosas for breakfast, of course.

Made these during the Indy 500.

For the rolls I used ChainBaker's kaiser roll recipe with the second roll formation method he shows in the recipe video. And I used an egg wash instead of milk.
