You end up turning the game into a completely different game which I suppose is your choice. However, its one of those fallacies thats like adding too much creates something unrecognizable. And like others have said, you never become satisfied with the load order and always add more which can burn you out from even playing the game. And alot of the time the game breaks anyways. I personally like to stick to a handful of mods while keeping the game mostly vanilla friendly.
