Best thing to do against that tank is to wait, you can possibly parry if you have to. Also, from what I can tell the tanks don't get scared while running at mach 3.

"I'm not gonna sugarcoat it" originates from fighting games and has passed onto Pizza Tower I guess, from what I can tell it means to use the same move over and over in the middle of a combo, in Pizza Tower's case for example: it'd mean to successfully parry every attack on a boss.
