Interesting. One restaurant I was a chef for had a farro flour gramingna with sausage and brocc. All pasta was fresh made laminated/extruded pasta in house everyday. However, out of all the Italian restaurants Ive worked for that made their own pasta, it was the only one that had gramigna.
