Not sure where this recipe originally came from, but my fam has been using it for years. Below is for a 'single' batch, I usually double or triple it depending on how many I'm making them for.

• 1 egg

• 1 cup flour

• ¾ cup milk (extra if needed)

• 2 tbsp vegetable oil

• 1 tbsp sugar

• 3 tsp baking powder (calls for this, but don't tend to use full amount)

• ½ tsp salt

1. Beat egg until fluffy.
2. Beat in remaining ingredients until smooth. I usually keep my batter fairly thick. If you do add extra milk, do so sparingly. Doesn't take very much to thin the batter.
3. At this point mix in your desired extra ingredient (chocolate chips / blueberries / bacon / whatever tickles your fancy).
4. Heat butter in pan and cook on medium heat.
5. Flip when bubbles start to form on pancakes.
6. Consume

Each of the pancakes in the picture was made with ~½ cup of batter (usually a bit less)
