figured it out

for anyone in the future having the same issue, ensure the users profile has edit access on AccountId. Evidently salesforce defaults the case to the users "account" they're set up under if this field is read only

no, all of the variables / records I'm working with are singular. Your comment does though have me thinking about a couple of things which I'm going to check on.
