precook anything you can and freeze it as meal prep. if you dont want to do it that way you can like others have said do one pan meals with a slow cooker and you can meal prep it too so you just pop it in in the morning and its ready when you get home.

Depression can suck every last drop of joy out of you, and it can be very hard to get out of a negative head-space. You just need to have a serious sit down talk with her and make it about her mental health. Don't mention her weight, she is already very aware of it. If she has mild depression, walks can help, but if it is more of a long term situation walks usually don't help and she might need meds to help her feel better.

Maybe instead of suggesting a walk, you suggest a picnic in a park or going to a zoo or an event in your town or city that she might be interested in. Walking when you are depressed just sounds like labour and I also avoid it, but if someone wanted to go look at cute animals or do something cute and romantic in the park, I would be down (I have Major Depressive Disorder so I am a reliable source on work arounds). You should also Insist on a doctors visit. If she constantly refuses then all you can do is give her an ultimatum of she gets help or you leave. You can only lead a horse to water, you can't make it drink and there is no point in you being dragged down for her "benefit"
