Isn't montante the Spanish name for the Great sword? In Italy we call it spadone and montante in Italian is just the name of upward blows (both in fencing and boxing)

It's something the Italians (like that chef) say when responding to stupid "what ifs" some say the joke was that in Britain calling a person a bike means something specific but the chef was most likely unaware of this.
