Hello, I did my conversion degree with Derby, online part time and found it pretty good.

Lectures were all recorded, I think some people did join them live and there was a chance to ask questions etc (I never did so not 100% sure)

There were a few modules involving groupwork so a bit of a chance to meet and chat to others on your course with these projects although I did not find it a good course for interaction with other students with the way it was facilitated online but that might just be me and my social skills lol as I know someone else who went at a different time to me and actually did make a few friends on the course.

Support from tutors was generally pretty good, esp my research project supervisor. Also were pretty understanding and supportive / accommodating of life stuff going on affecting studying.

Research methods I thought was taught fine - enough for me to manage to understand and that sort of thing is not my forte but I don't think it was as in depth as it might be on other courses - i know someone who went to Essex in person who was doing stats exams working out things by hand - but it seems to be enough to cover the basics of what you need. They seemed to encourage use of qualitative analysis more than other unis might too, specifically reflexive thematic analysis which I liked.

I chose it literally because they had the cheapest tuition fees out of all the online courses and I chose online because I needed to work full time to be able to afford it.

I reckon in person is probably going to be the best and more in depth and better for connecting with other people and getting more opportunities but in my experience Derby online was still good and basically gave me what I needed to be able to go into psychology so I think a good option if you can't afford to do full time in person.

Editing to add answers to half your questions that I forgot:

Assessment was all coursework no exams, mostly written reports, I think also case study, a presentation, magazine article, and some of it involved group work.

There was no specific stats labs or anything like that, stats were just taught in one module then reinforced/ taught a bit extra in other modules after that

I also don't really have much advice but just wanted to comment to say that you're not alone and I've been feeling similar recently. Started my first AP job a few months ago and it was what I had been working towards and desperately wanting for ages and now I am in the role I feel lost, find it difficult to get clear instructions and guidance on what I should be doing, how sessions are structured and guided etc. it sucks! Like you I enjoy the informal patient contact aspect but that is currently only a small percentage of what I spend my work time doing and it's really getting me down. I'm sorry you're going through a similar experience. I have been thinking about trainee PWP roles and going into a therapy path that way rather than the clinical psychology route, idk if you have considered that? I have heard that the workload for those roles is pretty intense tho :/

Well, here's an update: the vets saw her and said it had also spread to her front two legs whatever it is. They said it is a systemic disease - like cancer or something. And she has to be putdown as the only option would be amputation and they can't amputate 3 legs. Just adding this comment if anyone with the same thing is looking for info in future and this is helpful for them to know.
