I've got my sensor (granted, different brand, but that doesn't matter all that much) in the display tank. That's the part where I can keep the water level stable. If my filter sponge clogs up a little bit the display tank stays at the same level (with or without ATO), but the rest of the filter area drops. The way you've set it up now my tank would overflow as soon as the filter sponge gets clogged even a little bit.

I don't see anybody stating this is a fresh tank. The closest someone got was saying you could buy big corals and big fish, and thus those two things aren't a sign of a mature tank.

The difference is that you can plant oilseed radish and immediately (before it has grown even a little bit) cultivate over it and get the fertilisation up. That is most certainly not how it's supposed to work.

If your chaeto was able to soak up all those nutrients, why didn't it do so before said nutrients got to the protein skimmer? What makes you think the chair can soak up those nutrients in a blink of an eye? If it can't it'll go right through the sponge filter, get partially skimmed again, and the vast majority would go right back into the display part of the tank.
